The original Metzger honey dough is exclusively "cooked" with honey from Austria and stored in its raw state for over half a year. This allows the dough to mature naturally, until it is processed into Lebkuchen with only spices, without the addition of eggs, fat, preservatives, or flavorings.
Thanks to the honey in the dough, the Lebkuchen has a particularly long shelf life. If the Lebkuchen becomes dry, Grandma Metzger recommends: put it in a tin overnight with a sliced apple.
